SAMPLE RECIPE Beef Enchiladas | - Carmen Rodriguez - San Marcos
Vegetable Shortening 4 tablespoons
Corn tortillas 12
Lean ground hamburger meat 1 1/2 pound
Onion 1 medium, chopped fine
Garlic clove 1, chopped fine
Flour 1/4 cup and 1 tablespoon
Chili powder 21/2 tablespoons
Cumin powder 1 teaspoon
Water 2 cups
Salt 1 1/2 teaspoon
Black pepper 1/4 teaspoon
Mild cheddar cheese 1 1/2 pounds, grated
In 8 inch skillet, heat 3 tablespoons vegetable shortening and fry tortillas 1 at a time. Fry for just a few seconds, turn once and remove softened tortilla. Fry 1 at a time and be ready to roll.
Brown meat in 10 inch skillet and 1 tablespoon of vegetable shortening. Stir in 1/3 cup onions and cook for 5 minutes. Cover and cook at medium heat. Add garlic and flour, chili powder, stir and cook and add cumin powder. Stir and add 2 cups of water. Add salt and pepper and stir. Cover and cook for 15 minutes.
Have cheese, the rest of onion, meat and fried tortillas ready to roll. In each tortilla put 3 tablespoons meat mixture. Sprinkle cheese and onion, roll and put in an oblong oven-proof baking dish. Spread meat lightly and sprinkle cheese. Put in microwave, cover with plastic wrap. Poke 1 or 2 holes and set at 2 minutes on high temperature. Serve hot with lettuce and tomato salad and beans and Spanish rice. Makes 12 enchiladas.
