SAMPLE RECIPE Mormon Muffins | In 1976, when the King family opened the Greenery as part of Rainbow Gardens, they remembered the bran muffins made by their great-grandmother, Nana Chaffin. But, none of them had the recipe. So, the family asked gourmet cooking instructor T. Upton Ramsey of Salt Lake City for help. The following recipe is his interpretation of their childhood memories and is named in dedication to their ancestry.

2 cups BOILING WATER
5 tsp. BAKING SODA
1 cup SHORTENING
2 cups SUGAR
4 EGGS
1 qt. BUTTERMILK
5 cups FLOUR
1 tsp. SALT
4 cups ALL BRAN® CEREAL
2 cups 40% BRAN FLAKES®
1 cup chopped WALNUTS
Add baking soda to boiling water and set aside. Whip shortening and sugar until light and fluffy. Add the eggs slowly. Mix well. Add buttermilk, flour and salt and mix well. Add soda water very slowly. Gently fold the cereals and the walnuts into the mix. Let muffin mix sit in the refrigerator over night. Spoon 1/8 cup of mixture into greased muffin tins. Bake at 350° for 30 minutes. Let cool for five minutes.
Makes 3 dozen muffins.
Wasatch Mountain Range
The Wasatch Range extends from Mount Nebo, near Nephi, northward into Idaho. The western side of this rugged range is very steep, rising 6,000 to 8,000 feet above the valleys that border it. The Wasatch Range has many canyons that provide water and serve as recreation areas. |
