SAMPLE RECIPE Grilled Salmon Kabobs | 1 lb. SALMON, cut into bite-sized pieces
1/4 cup OIL
1/4 cup finely chopped ONION
1/4 tsp. each ROSEMARY and THYME
1/3 cup ORANGE JUICE
1 tsp. ORANGE ZEST
12 fresh, whole MUSHROOMS
12 ORANGE WEDGES
12 CUCUMBER CHUNKS
Marinate the salmon with a mixture of oil, onion, seasoning, orange juice and orange zest for 1 hour. Arrange the salmon, mushrooms, orange wedges and cucumber chunks on 4 skewers. Place on grill. Turn and brush with marinade several times. Grill for 8-10 minutes or until fish flakes. |
